The award winning Pepe Jijon has done something special with his famous Sydra by adding his signature Oxidator process. Sydra and Gesha are grown at Finca Soledad, as well as their amazing Typica Mejorado. On his 120 hectare farm, Pepe's belief is biodiversity will drive the quality of the coffee, not human created inputs.
Finca La Soledad is a farm that was purchased in 2010, by Pepe and his father, while working for the Red Cross in Ecuador. Intag is not traditionally a coffee producing region and positioned more as a mining region. The region is relatively close to the Colombian border and the department of Nariño, an area famous for all the Colombian producers. Soon after purchasing this land to develop coffee, hiring locals in the region to protect them from the damages that the mining industry has left in this area became a purpose. Mainly hiring women in the region, Pepe provides a stable income, paying them weekly and working to support their families.

Stunningly bright and clean with notes of Tangelo, Raspberry, Hibiscus, Honeysuckle, Pome fruits, and Caramel.
Process: Using a variation of a washed process, the coffee is left to ferment aerobically in the open environment to promote an oxidated fermentation. The coffee is then pulped and fermented in sealed tanks for 48hrs in its mucilage before being washed, then dried in both indirect and direct sunlight for 20 days.
We suggest letting the coffee rest for 3-4wks.
This was our first Direct Purchase with a Farmer/Producer and we are beyond happy it is Pepe Jijon.
