EL PARASIO DECAF

This is the first Decaf coffee where we had to double check waht we were drinking. This Decaf is an absolute stunner with juicy tropical fruits, and lots of colour. Not too many decaf coffees can taste great on pourover but this one will surprise many. Easy to drink late in the afternoon or in the evening in the colder months of the winter without the caffeine jitters keeping you up at night. Highly recommended for those wo are sensitive to caffeine but still love the taste of coffee. We are truly amazed by this decaf coming from the great producer and chemist Wilton Benitez.

The coffee is decaffeinated with Ethyl Acetate derived from cane sugar preserving the coffee's sweetness and natural character.

We taste candy-like fruits if Grape, Plum, Rose, Kiwi, Melon and Chocolate.

This Decaf coffee goes through whole cherry fermentation for 48 hours whilst yeast (Saccharomyces pastorianus) is added. The cherry is then pulped and fermented for 68 hours. During cherry fermentation, natural grain juices are produced that are incorporated in the second fermentation after pulping. Afterwards it is washed and dried for 48 hours at a warm temperature.

Wilton Benitez has been growing coffee for 26+ years,16+ years of experience with specialty coffee, a roaster and a Q-grader processor. Granja Paraíso 92 is a family farm that uses highly innovative farming systems and the use of bioreactors and specific microorganisms for controlled fermentation coupled with a constant control and monitoring of factors such as temperature, pH, brix degrees and electric conductivity make Granja Paraiso 92's coffee to stand out from the rest and offer a value addedlike no other. All this allow the producer to have distinct, unique and standardized profiles and notes.
