pepe jijon - typica mejorado washed

Typica Mejorado is currently our favourite varietal with some saying Mejorado is preferred over Gesha with similar clean citric and red fruits and high quality cup. It is mainly grown in Ecuador as only a few people can grow it and Pepe Jijon is at the forefront of this amazing varietal. It is an extreme honour to be able to be showcasing Pepe's amazing work.

Before being submerged in the world of coffee, Pepe was the first Latin American to solo climb all 7 summits - the highest summit on each continent. Quite the feat!

Typica Mejorado Washed

This extremely clean and vibrant coffee reminds us of Red Currants, Cranberry, Hibiscus, gentle Florals, Sparkling Lemon, Green Tea and sweet Raspberry like Candy. Has an almost Kenyan/Red fruit like profile, but with more florality and sweetness.

Process: Coffee cherries harvested at 22brix and processed using a modified Natural method. First, the coffee cherries undergo a 72hr fermentation period in tanks, utilizing wild yeast. Next, they are dark room dried.

Mejorado is a unique varietal mainly grown in Ecuador. Colloquially known as Typica Mejorado. It has recently be discovered to be a Bourbon variety cross-pollinated with an Ethiopian Landrace variety. The cup profile is meant to have a more refined sweetness and body and a higher quality acidity compared to the regular Bourbon variety.

We suggest letting the coffee rest for 3-4 wks.
