quebraditas - edinson argote

SIDRA advanced natural

This gorgeous coffee is a Punchy Red Fruit Explosion. Edinson Argote and his partner Luz Ángela Rojas has made a super indulgent coffee that is peak Colombian innovation! This is a super funky coffee and is loud AF, not for the faint of heart. If you were a fan of the Red Fanta or the El Diviso Ombligon, this one is right up your alley!

We taste Tropical Dragon Fruit (Pitaya) , Cherry Jolly Rancher sweetness, Banana Marshmallows and mouthwatering Watermelon.

FARM

Quebraditas Coffee Farm, is a family-run project focused on producing specialty coffees with unique and distinctive flavour profiles. These qualities are achieved through our fermentation processes, including thermal shock and yeast inoculation. In addition, they implement agronomic practices centred on soil care, such as strategic shading, the use of organic matter, and maintaining proper pH through amendments and lime treatments, which allow them to enhance cup quality right from the cultivation stage.

PROCESS

Fermentation

This is an Advanced Natural Sidra, what does that mean? Hydro + Yeast Innoculated!

Let's start with the Ripest Cherries picked and floated. Sealed in drums for a 72hr Fermentation in an Anoxic environment. Dried for 12 days to 15% moisture content and then re-hydrated with Hot water. Innoculation begins with a specific yeast and mosto culture from previous fermentations for another 96hrs below 25C. Dried again for 76hrs at 40C, finally stabilizing in GrainPro Bags.

SIDRA VARIETAL

Sidra has been a popular and unique coffee for a reason. Said to have originate in Ecuador and thought to be a cross between Red Bourbon and Typica. This breed has a very floral forward profile, and is genetically similar to Ethiopian Heirloom varietals. Prized for it's intense sweetness and crisp acidity and florals, it is often compared to Geisha.

We suggest letting the coffee rest for 2wks.
