PINK BOURBON Anaerobic WASHED

The Vargas name is famous with Legendary Alexander Vargas. His Son Arley is right there at every step learning the ways. This is another unique Pink Bourbon that surprised us and are extremely happy to share with everyone. A bright and sparkling Colombian with some bite and Tropicals.

This Bright Pink Bourbon has layers of Sparkling Hibiscus, Lime, Mango, Peaches, Plum, and Honey.

PRODUCER

Arley is part of the family business, working at La Piragua along with his father Alexander Vargas. He inherited Alexander’s passion for high quality coffees. The family prioritizes sustainable coffee production, including incorporating regenerative practices on the farm. They use both washed and natural processes to offer coffees with a variety of beautiful profiles.

PROCESS

The family uses Brix measurements to ensure they are picking coffee at peak ripeness. Arley uses a double fermentation technique: first, an oxidized fermentation for 72 hours, then an anaerobic fermentation in barrels with degassing valves for 98 hours. Drying is exclusively carried out in dryersheds over 15 to 20 days, ensuring consistent and uniform quality.

VARIETAL

Pink Bourbon is a sought-after Arabica coffee varietal originating from Colombia, characterized by its unique coloured ripe cherries, which are a result of a genetic mutation affecting pigment synthesis. Despite its name, it is genetically distinct from the Bourbon varietal, possibly a hybrid with the"Colombian variety" and an Ethiopian landrace, resulting in a desirable sweet, floral, and fruity flavour profile. Pink Bourbon requires specific high-altitude conditions and careful cultivation for proper cross-pollination to maintain its distinct cherry colour and produce its characteristic complex, aromatic, and juicy cup with notes of Peach, Meyer Lemon, and Tropical fruits.
