JOSE RICARDO LEGUIZAMO PEDEREROS

EXTENDED FERMENTATION WASHED

We are happily surprised this Colombian has a beautiful complex acidity. A sound, high quality Colombian, we have been enjoying this Washed Extended Fermentation on pourover.

The Cercert producer group, led by Yaqueline Hernandez-Alban, was founded in 2017 by smallholders in La Plata and La Argentina seeing better prices than those offered through the FNC and local associations. Several members of the Crecert producer group banded together around advanced farm management (including an interest in new varietals), processing (such as precisely monitored extended fermentation and 2-phase drying) and the environment (blending subsistence crops with sustainable agroforestry). The combination of these practices, with a pinch of pride, brings a crystal clear
complexity to their coffees.

We taste Apricot, Pomelo, Lime, Cacao and Brown Sugar

We suggest letting the coffee rest for 2-3wks.
