This Pink Bourbon from Yenifer Rojas Trujillo is a fine example of a bright & clean Washed Pink Bourbon. This coffee has a nice brightness, subtle fruits and followed by gentle florals and tropicals. Has everything you need and want from a Pink Bourbon. I tell people it's a sleeper but defo slaps!

Yenifer Rojas Trujillo, a name synonymous with dedication and excellence in specialty coffee, grew up in the lush landscapes of Gigante, Huila, where coffee runs deep in her family’s roots. Fifteen years ago, she embarked on her journey in the coffee world, starting with cupping classes that ignited a passion for understanding the nuances of flavor and quality. With her parents laying the foundation two decades ago, Yenifer took their legacy to new heights, combining tradition with innovation.
Her farm, aptly named Varietales, spans four hectares perched at an altitude of 1,750 to 1,800 meters. Here, the richness of the soil and the ideal climate provide the perfect backdrop for cultivating exceptional varieties like Geisha, Borbón Rosado, Whush Whush, and Borbón Rojo Rayado. Each bean reflects the care and precision she pours into her work, driven by her love for producing coffee that delights clients worldwide.
The farm’s processes are a testament to her commitment to quality and sustainability. Yenifer employs meticulous fermentation techniques, starting with 12 hours in tanks, followed by depulping and another 48 hours of fermentation. The drying process is equally deliberate, with coffee beans resting for an average of 15 days in a traditional marquesina. These methods preserve the integrity of the beans, ensuring every cup tells a story of patience and care. Over the years, Yenifer has focused on adopting environmentally friendly practices and effective fertilization methods to enhance both her yield and the land’s health. Beyond coffee, she cultivates yucca and plantain, demonstrating her holistic approach to farming and her commitment to diversifying her land’s output while maintaining sustainability.
