
PINK BOURBON P09
We yet again have another sensational jewel coming from the mad scientist, Wilton Benitez. This Pink Bourbon P09 was one of our favourite coffees from last year and so we had to pull all stops to get it and to share it with you. We are very fortunate to have received this coffee from the great people at Macarena Cafe in Montreal.
A juicy, mouthwatering delight, this coffee has astounding aromatics and herbaceous flavours of Strawberry, Rhubarb, Passionfruit, Ruby Grapefruit and candy reminiscent of Bubblegum and Cotton Candy.
The Pink Bourbon varietal from Wilton Benitez is processed by anaerobic fermentation, a processing method where coffee is fermented in pressurized sealed tanks deprived of oxygen. Different and distinct flavour profiles are produced whilst oxygen is removed. The Thermal Shock finishes the process where extremely hot water impacts the beans, then quickly shocked with extremely cold water to lock in those unique flavours into the bean.
Wilton Benitez has been growing coffee for 26+years, 16+ years of experience with specialty coffee, a roaster and a Q-grader processor. Granja Paraíso 92 is a family farm that uses highly innovative farming systems and the use of bioreactors and specific microorganisms for controlled fermentation coupled with a constant control and monitoring of factors such as temperature, pH, brix degrees and electric conductivity make Granja Paraiso 92's coffee to stand out from the rest and offer a value added like no other. All this allow the producer to have distinct, unique and standardized profiles and notes.
